3 ½ ozs pearled Spelt
3 Tbsps extra virgin olive oil
1 Tbsp lemon juice
½ Tbsp white balsamic vinegar
½ Cucumber (thinly sliced and chopped)
7 ozs cherry Tomatoes (halved)
1 clove garlic cloves (finely chopped)
4 Chicory (endive)
3 Tbsps Cashews
salt

1 Springform pan, 2 Bowls, 1 Small bowl, 1 Measuring cups, 1 Tablespoon, 1 Teaspoon, 1 Fine-mesh sieve, 1 Whisk, 1 Hand mixer

Preparation steps

Put the spelt into a pan and cover with water. Bring to a boil, reduce the heat and simmer for 20-25 minutes, until tender. Drain and rinse well

Put into a bowl and add the oil, lemon and vinegar, stirring well. Leave to cool.
3.
Add all the other ingredients and toss together. Season to taste with salt and pepper.
