Preparation steps

1.

Soak raisins in warm water. Bring rice to a boil with almost twice the amount of lightly salted water, cover and cook over low heat about 20 minutes.

2.

Peel pineapple thoroughly and cut into quarters lengthwise. Cut out core, halve the quarters lengthwise and cut crosswise into small pieces. Peel the onions and cut into fine cubes.

3.

Peel garlic.

4.

Heat the oil in a wok or in a deep pan and sauté onions briefly. Add the eggs, squeeze garlic through a press into the wok and mix everything together. Stir-fry until light brown. Add rice, pineapple, tomatoes and raisins, stir to combine, heat through and season with fish sauce and sugar. Distribute among plates and serve garnished with cilantro.
