1 garlic clove
30 grams fresh ginger
6 scallions
3 Tbsps sesame oil
4 eggs
1 generous pinch ground Turmeric
salt

Preparation steps

Rinse the rice. Bring to a Boil in plenty of lightly salted water. Cover and simmer over low heat for about 25 minutes. Leave to cool. Peel and finely chop the ginger and garlic. Rinse the scallions and cut into thin rings.

Fry the rice in hot oil for 2-3 minutes. Add the ginger, garlic and scallions. Fry for another 3-4 minutes. Beat the eggs with turmeric and pour over the rice. Let thicken for 2-3 minutes, stirring constantly. Season with salt and pepper. Serve sprinkled with chives.
