- 750 grams small shallots
- 125 milliliters olive oil
- 250 milliliters Sherry vinegar
- 375 milliliters water
- 1 bay leaf
- 1 cloves
- 1 red chili pepper
- 1 sprig thyme
- 1 tsp black peppercorns
- 1 tsp salt
- 1 pinch sugar
Preparation steps

Peel shallot and saute until golden brown in hot olive oil. Mix sherry vinegar with water and add in all the spices. Pour over the shallots.

Cover and simmer for about 30 minutes on low heat. Remove from heat and let shallots cool in the liquid. Serve.
