Preparation steps

1.

Peel onion and dice. Heat olive oil in a pan. Sauté onion. Add tomatoes with liquid and crush tomatoes with a wooden spoon. Simmer for an additional 5 minutes.

Rinse herbs, shake dry and chop into small pieces. Reserve a small amount for garnish. Cut melon into pieces. Add melon, herbs and vinegar to the tomato sauce and heat through. Season with salt and pepper to taste.

3.

Boil penne according to package instructions in plenty of salted water until al dente. Mix pasta and sauce together. Garnish with herbs prior to serving.
