Preparation steps

Peel onion and finely chop. Blanch tomatoes for a few seconds, rinse in cold water, peel, quarter, core and cut into small pieces. Heat oil in a saucepan, add onion and sauté until soft. Add tomatoes and simmer for about 8 minutes, stirring occasionally.

Season sauce with sugar, salt and pepper. Pluck leaves from herbs. Cook penne according to package instructions and mix with tomato sauce. Garnish with herbs and sprinkle with Parmesan.
