Ingredients

2 garlic cloves

400 milliliters Coconut milk
50 grams Peanut butter
1 Lime (juiced)

Preparation steps

1.

Peel the garlic. Rinse the chili pepper, cut in half, and remove the seeds. Finely dice the garlic and the chilis. Heat the oil in a saucepan and sweat the garlic until translucent. Add the peanuts, sauté briefly, then mix in the coconut milk. Mix in the creamy peanut butter, and stir until combined. Simmer the sauce over medium heat for 7 minutes. Season the sauce to taste with salt and 1-2 tablespoons of lime juice.

For the peanut variant, peel a fresh pineapple. Remove the core ad cut the pineapple into rings. Dice the rings into 1 cm (approximately 1/2 inch) large pieces. Rinse, trim, and thinly slice the scallions on a bias. Add both to the sauce.

For the sambal variant, add 1 teaspoon of sambal oelek to the sauce.

This sauce goes great served with satay dishes.
