1 Tbsp olive oil
salt
3 Tbsps Peanut butter
3 Tbsps lemon juice
freshly ground peppers
2 bunches scallions
2 chili peppers
½ Cucumber
Coriander
2 Tbsps Peanuts

Preparation steps

Cook pasta together with the oil in plenty of salted water until al dente, then drain, rinse in cold water and drain again. Mix peanut butter with the lemon juice and 4 tablespoons hot water and season with salt and pepper. Trim scallions, rinse and cut into long, thin pieces. Rinse chile peppers, remove seeds and cut into thin rings or strips.

Peel cucumber, cut in half lengthwise, cut into 5 cm (approximately 2-inch) long pieces and cut pieces into narrow strips.

Mix half of the scallions and cucumber with peanut sauce in a bowl and fold in the farfalle. Rinse the cilantro, pat dry and pluck off the leaves. Arrange the remaining vegetables on plates. Arrange the farfalle on the vegetables, sprinkle with the peanuts and serve garnished with cilantro leaves.
