- 1 ½ cups all-purpose flour
- ½ cup cocoa powder
- ½ tsp baking soda
- ¼ tsp salt
- ½ cup caster sugar
- ½ cup dark brown Muscovado sugar
- ½ cup butter (softened)
- ¼ cup smooth Peanut butter
- 1 egg
- For the filling
- ¾ cup smooth Peanut butter
- ¾ cup powdered sugar
- ½ cup Chocolate chip (plain)

Preparation steps
1.
Heat the oven to 190°C (170°C fan) 375°F gas 5. Line 2 baking trays with non-stick baking paper.

Mix together the flour, cocoa powder, bicarbonate of soda and salt.
3.
Beat together both the sugars, the butter and peanut butter in a mixing bowl. Beat in the egg until blended.

Stir in the flour mixture and mix well.
5.
For the filling: stir together the peanut butter and icing sugar. With lightly floured hands shape the filling into 25 small balls.
6.
Take about 1 tablespoonful of the chocolate dough, shape into a ball and make an indentation in the centre.
7.
Place a peanut butter ball in the centre and gently bring the chocolate dough up and over the peanut butter filling. Press the edges together and roll gently into a ball.
8.
Place the cookie on the baking tray and arrange 4 or 5 chocolate chips on top.
9.
Grease the base of a flat-bottomed drinking glass and press gently on the cookie until it is flattened to about 1cm| 1/2" thick. Repeat with the remaining dough and filling.
10.
Bake in the oven for 6–8 minutes until set. Cool on the trays for 5 minutes and then place on a wire rack to cool completely.
