100 grams Celery root

1 garlic clove
2 sprigs oregano
2 Tbsps olive oil
400 grams Ground meat (beef)
2 Tbsps Tomato paste
100 milliliters strong Red wine
250 milliliters organic Beef broth
salt
1 pinch sugar
freshly ground peppers
400 grams diced Tomatoes (canned)
400 grams Spaghetti
40 grams Parmesan

Preparation steps

Peel carrot, celery, onion and garlic and chop everything finely. Rinse oregano, shake dry and pluck leaves from stem. Heat oil in a pan and fry ground beef while stirring until crumbly. Add prepared vegetables and sauté for another 2-3 minutes. Add tomato paste, stir and deglaze the pan with wine and broth and season with salt, sugar and pepper. Add tomatoes and stir. Let simmer partially covered for about 40 minutes while stirring occasionally. Add broth or pasta water as needed to reach desired consistency.

Cook spaghetti in a pot of boiling salted water until al dente. Then drain. Arrange pasta on plates and cover with meat sauce. Serve with grated Parmesan.
