- 400 grams Linguine
- salt
- 4 Chicken breasts (each about 140 grams)
- 500 grams green Asparagus (if desired, Thai asparagus)
- 1 red chili pepper
- 1 garlic clove
- 3 Tbsps sesame oil
- 200 milliliters Coconut milk
- 1 Tbsp Tahini
- lemon juice
Preparation steps
Cook the pasta in salted water until al dente. Rinse the chicken breasts, pat dry and cut into slices. Peel bottom third of the asparagus and cut the spears into 2-3 cm (approximately 1-inch) long pieces.
Rinse, trim and chop the chile pepper. Peel garlic and also finely chop. Brown the chicken in 2 tablespoons hot oil until golden brown in a pan and remove from pan.
In the rest of the hot oil, sauté the asparagus pieces, chile pepper and garlic 1-2 minutes. Stir in tahini. Deglaze with the coconut milk and simmer very gently over low heat for about 5 minutes. If necessary add a little water.
Add the chicken pieces back to pan, and cook just until done, 2-3 minutes. Season lemon juice and salt to taste and toss with the drained pasta before serving.
