800 grams Kohlrabi
salt

2 eggs
80 grams Pastry flour
1 pc Parmesan (30 grams)
150 grams breadcrumbs
4 Tbsps sunflower oil
2 bunches Fresh herbs (such as dill, parsley, chives, chervil)
400 grams Yogurt (low-fat)
1 splash lemon juice
cayenne pepper
4 leaves Lettuce

Preparation steps

1.

Peel kohlrabi and cut into 1/2 cm (approximately 0.1 inch) thick slices. Season with salt and pepper.

2.

Whisk eggs in a deep bowl. Place flour into a deep plate.

3.

Grate Parmesan and mix with breadcrumbs in a deep bowl.

4.

Dip kohlrabi slices first in flour, then in eggs and finally coat with Parmesan mixture.

5.

Heat oil in a pan. Cook kohlrabi slices, few at a time, until golden brown on both sides. Drain on paper towels.

6.

Rinse herbs, shake dry and set some aside for garnishing. Chop the rest of herbs and combine with yogurt. Season with lemon juice and cayenne pepper and place in a bowl.

7.

Rinse lettuce leaves and shake dry. Arrange lettuce and kohlrabi on plates, garnish with herbs and serve accompanied by yogurt sauce.
