1 Tbsp olive oil
1 Tbsp Tomato paste
150 milliliters Vegetable broth
2 tsps freshly chopped thyme
8 small Turkey cutlets (about 80 grams or 2.8 ounces)

2 eggs
60 grams grated Parmesan
2 Tbsps olive oil
2 tsps butter
350 grams Spaghetti

Preparation steps

1.

Blanch tomatoes briefly, shock in ice water, peel, core, and dice. 

2.

Peel and mince shallots and garlic. Heat oil in a pan and sauté shallots and garlic. Stir in tomato paste and diced tomatoes. Deglaze with broth and season with thyme and pepper. Simmer and cook for about 30 minutes.

3.

Flatten turkey, as needed and season with salt and pepper, then dredge in beaten eggs and parmesan.

4.

Heat oil and butter in a pan and cook turkey over medium heat for 3-4 minutes on each side.

5.

Meanwhile, boil spaghetti in salted water until al dente.

6.

Plate spaghetti and drizzle with sauce.

7.

Top with turkey and serve.
