350 grams Tagliatelle
1 shallot
1 tsp butter
1 Tbsp Noilly Prat
l Whipped cream
200 grams Mascarpone
salt
freshly ground pepper
1 generous pinch cayenne pepper
Oranges (juiced and zested)

Preparation steps

1.

Peel shallot, chop and cook in hot butter until soft. Deglaze with vermouth, stir in cream and simmer for about 5 minutes. Stir in mascarpone and season with salt, pepper, cayenne pepper, orange juice and zest. Add the diced salmon and cook for 5 minutes. 

2.

Cook pappardelle in plenty of boiling salted water until al dente, drain and serve with the salmon sauce.
