2 Papaya (each 350 grams)
3 Limes (juice)
80 grams cane sugar

Preparation steps

1.

Cut papayas in half lengthwise and remove seeds with a spoon. Peel fruit halves. Pour 300 ml (approximately 9 ounces) of water in a small pot.

Add turbinado sugar to the pot.

3.

Increase stove temperature to high heat and boil sugar water.

4.

Boil down sugar water for about 5 minutes until sugar water thickens into a syrup.

Cut papaya halves into small pieces and put into a mixing bowl.

6.

Add sugar syrup and 100 ml (approximately 3 1/2 ounces) lime juice to the mixing bowl.

7.

Puree with an immersion blender.

8.

Season the puree to taste with a little lime juice.

9.

Pour fruit puree into a shallow metal bowl and place covered in the freezer.

10.

Freeze for 4 hours.

11.

Stir puree briefly every hour with a wooden spoon.

12.

To serve, spoon sorbet out of the bowl into sorbet balls or ribbons.

13.

Serve in dessert bowls and garnish with lime zest.
