Preparation steps

Mix the flour, baking powder, cocoa powder, sugar and vanilla sugar. Mix the oil, yogurt, milk and orange juice. Quickly stir the flour mixture into the oil mixture. Fold in about 100 grams (approximately 3.5 ounces) of the papaya cubes.

Line a muffin tin with paper cups. Pour in the batter. Bake for about 25 minutes at 180°C (approximately 350°F). Remove from the oven and let cool.

Mix the mascarpone with the coconut syrup. Finely chop the remaining papaya. Place a dollop of the mascarpone on each muffin. Sprinkle with the papaya and serve.
