1 kilogram ripe Papaya
4 shallots
250 milliliters White vinegar
150 grams brown sugar
1 Tbsp black Mustard seed
1 Tbsp Garam Masala

Preparation steps

1.

Peel and halve the papaya. Remove the seeds, and finely dice the fruit. Peel and finely dice the shallots.

Bring the vinegar to a boil with the sugar, mustard seeds, garam masala, and 150 ml (approximately 5 ounces) of water. Reduce the heat and simmer for 10 minutes. Mix in the papaya and shallot. Simmer gently for 10 minutes, stirring occasionally.

3.

Season to taste with salt and cayenne pepper. Divide into prepared jars, seal tightly, and cool completely.
