- 200 grams cream cheese
- 2 Tbsps finely chopped Fresh herbs
- 25 grams of sunflower seeds, pumpkin seeds and Sesame seeds
- 1 Papaya
- 1 large Mango
- 80 grams soybean sprout
- Endive
- juice of 1 lemons
- 1 pinch salt (and cayenne pepper)
- 1 Tbsp Pineapple jam

Preparation steps
1.
Mix the cream cheese with the herbs. Form the mixture into balls and roll in the sunflower seeds, pumpkin seeds and sesame seeds. Place in the refrigerator.

Cut the papaya in half and remove the seeds. Peel the fruit and cut into pieces. Peel the mango and cut the flesh into columns. Rinse the sprouts briefly and drain. Brush the endive, rinse and shake dry.
3.
For the sauce, season the lemon juice with salt and cayenne pepper and mix with the jam.
Arrange the endive on plates along with the papaya, mango and sprouts. Pour the lemon-pineapple sauce over the top and serve with the soft cheese balls.
