- 4 cups Vegetable broth (store bought product)
- 1 stick Lemongrass
- 4 Tbsps light soy sauce
- 3 Tbsps Lime juice
- ½ inch freshly grated ginger (chopped)
- 1 clove garlic cloves (chopped)
- 9 ozs Chicken breasts
- 1 red chili pepper
- 1 cup Snow peas
- 2 Tomatoes
- 2 chinese Cabbage
- 7 ozs Asian egg noodle
- ⅓ cup Walnut (roughly chopped)
- 1 bunch cilantro (fresh)

Preparation steps

Put the vegetable broth, the lemon grass, two tablespoons of soy sauce, two tablespoons of lime juice, ginger and garlic in a saucepan and bring to a boil. Now put in the chicken breast, cover with a lid and simmer for about 15 minutes over a low to medium heat. Wash the chilli and cut into rings. Add to the broth. Wash the snow peas, wash and deseed the tomatoes. Clean the Chinese cabbage leaves. Cut the vegetables into thin strips.

Remove the lemon grass and the chicken breast from the broth. Cut the meat into bite-sized pieces.

Put the Asian noodles in the soup and simmer for about 2 minutes in the broth. Add the vegetables and the meat and warm. Season with soy sauce and lime juice. Garnish with the roughly chopped walnuts and coriander leaves before serving.
