5 Oranges
1 lemon (juice)
1 egg white

Preparation steps

1.

Boil the sugar with 150 ml (approximately 2/3 cup) of water and then simmer for about 5 minutes. Zest the orange and add to syrup. Let cool down. Cut the grated orange in half and cut 1/3 off the top of the remaining oranges. Scrape out the pulp of the remaining 4 oranges, squeeze out the juice and freeze the peels.

Add the orange juice to the cooled syrup mix. Stir the lemon juice into the mixture. Whisk the egg white until half stiff and fold into the mixture. Place sorbet in a flat metal pan and freeze at least 4 hours in the freezer. Stir well every 30 minutes,or finish in an ice cream machine.

Before serving, stir vigorously again and scoop the sorbet into the frozen orange peels.
