¼ cup sugar
14 ozs Melon (roughly chopped)
1 Blood orange (juiced)
mint (if desired)

Preparation steps

Bring the sugar to a boil with 8 ounces of water, then simmer for a few minutes to dissolve. Leave to cool.

Purée the melon, blood orange juice and cooled syrup. Transfer the mixture to an ice cream maker and freeze, stirring. Alternatively, pour the mixture into a flat bowl and freeze for 4-5 hours. Stir thoroughly with a fork every 20 minutes to prevent ice crystals from forming.

Before serving, stir thoroughly one last time, shape into balls using a melon baller and arrange in bowls or in a hollowed-out melon, for example. Garnish with mint if desired.
