- 2 Zucchini
- 100 grams Shiitake mushroom
- 2 Onions
- 2 tablespoons Olive oil
- 1 Garlic clove
- freshly ground pepper
- 4 portions Instant mashed potato (From the package + milk)
- 2 tablespoons dried Onion
- 1 tablespoon Chopped green onion
Rinse and slice zucchini. Rinse shiitake mushrooms. Peel the onions and cut into rings.
Heat the olive oil in a pan and sautée shiitake mushrooms and onions for 2-3 minutes. Peel garlic, squeeze through a garlic press and add to the pan. Stir in zucchini and cook everything for 3 minutes. Season with salt and pepper.
Prepare the mashed potatoes according to package directions. Finely crumble the dried onion and stir in. Serve the mashed potatoes with the vegetables and chives.
