60 grams Pine nuts
300 grams liquid honey
2 egg whites
70 grams Pistachio (finely chopped)
4 Wafer (12 x 20 cm)

Preparation steps

1.

Toast almonds and pine nuts in a dry frying pan. Allow to cool in a bowl.

2.

Boil honey, stirring constantly, over medium heat. Remove from heat. Beat egg whites until stiff and fold into the honey. Allow to caramelize until brownish, stirring constantly. Add almonds, pine nuts and pistachios.

3.

Spread mixture over wafer and cover with a second wafer, pressing together. Cover with a small board for weight and let dry for about one hour. Cut into rectangles and serve.
