Preparation steps

1.

Rinse onions, carrots and celery, peel or trim and cut into small cubes. Cut leek lengthwise, rinse thoroughly under running water, shake dry and cut into small cubes. Rinse parsley, shake dry and chop coarsely. Rinse tomatoes, remove stalk and seeds and dice.

Preheat the oven to 80°C (approximately 175°F).

Puree vegetables and parsley finely in a blender and season with salt.

Spread pureed vegetables on a lined baking sheet and allow to dry at least 8 hours in the preheated oven. The oven can be kept open slightly with a wooden spoon handle in the oven door.  Rotate baking sheet occasionally and let vegetable mix dry completely. Grind powder again in a blender.

5.

Melt coconut oil in a small saucepan. Add powder to oil and mix well. Add more coconut oil if needed. Pour the coconut oil mixture into small ramekins of about 2 x 4 cm (approximately 1 x 2 inches) and press tightly using a spoon. Or pour coconut mixture into an ice cube tray and allow to solidify in the refrigerator.
