- 500 grams button Mushroom
- 1 finely chopped shallot
- 2 Tbsps butter
- 1 Tbsp Pastry flour
- 750 milliliters Chicken broth
- 250 grams acidic Whipped cream
- salt
- freshly ground peppers
- 1 Tbsp lemon juice
- 2 Tbsps finely chopped parsley
Preparation steps

Rinse the mushrooms and cut into slices. Sweat the shallot in hot butter until translucent. Add the mushrooms and saute over high heat, stirring constantly, for about 2 minutes. Sprinkle with flour and saute for another 2-3 minutes. Pour in the broth and simmer for another 10 minutes.

Lightly whisk in the sour cream. Bring to a boil. Season with salt, pepper and lemon juice. Serve sprinkled with parsley.
