10 grams dried Porcini mushroom
0.13 l water
½ l Vegetable broth
20 grams Bacon
20 grams butter
1 shallot
200 grams fresh Chanterelle
peppers
salt
thyme
garlic cloves
0.13 l white wine
2 Tbsps chopped parsley

Preparation steps

1.

Rinse the dried mushrooms and place in a small bowl with 1/8 liter (approximately 1/2 cup) of water. Let the mushrooms soak for about 1 hour.

Briefly boil the vegetable broth, and keep warm over a low temperature. Cut the bacon into small cubes. Peel and finely chop the shallot. Fry the bacon and shallot in the butter.

3.

Rinse the fresh chanterelles and add to the pot. Saute over medium heat until soft. Season with salt, pepper and thyme. Press the garlic and add.

4.

Deglaze the mushrooms with white wine and add to the broth. Add the soaking mushrooms to the soup. Just before serving, sprinkle the soup with freshly chopped parsley.
