250 grams mixed Lettuce (such as radicchio, frisee lettuce)
1 handful Chives
3 Tbsps apple cider vinegar
1 Tbsp lemon juice
1 tsp Mustard (medium hot)
2 Tbsps Canola oil
2 Tbsps Walnut oil
salt
freshly ground peppers
sugar
125 grams Corn flakes
4 Tbsps Pastry flour
2 eggs
4 Chicken breasts (each about 150 grams)
3 Tbsps Canola oil

Preparation steps

1.

Peel and rinse carrots, cut into thin strips. Peel, halve and slice kohlrabi. Rinse and spin dry lettuce, tear into bite-sized pieces. Rinse chives, shake dry and cut into small rings.

Whisk vinegar with lemon juice, mustard and two oils, add chives and season with salt, pepper and sugar.

Place cornflakes in a freezer bag and crumble coarsely. Place flour, eggs and cornflakes on separate plates.

Rinse and par dry chicken, season with salt and pepper. Coat with flour, dip into eggs and roll in cornflakes. Heat oil in a nonstick skillet and cook chicken for about 6 minutes, turning once. Arrange lettuce with carrot strips and kohlrabi on dinner plates. Remove chicken from the pan and cut into strips. Top salad with chicken and drizzle with dressing. If desired, serve with toasted ciabatta.
