Mixed Chicken Salad
Season the chicken breasts with pepper and curry. Sear in a little butter and then simmer over low heat.
Rinse the lettuce, shake dry and tear apart. Halve the beets and then plane. Peel the avocado, remove the pit and cut the flesh into cubes. Rinse the apples, remove the seeds, halve and slice.
Mix all the prepared salad ingredients in a bowl.
Rinse the parsley, shake dry and pluck off the leaves.
For the dressing, combine the oil, curry, honey and vinegar.
Cut the chicken into thin slices and mix into the salad. Drizzle with the dressing and serve showered with parsley.
