125 grams day-old white bread
4 Date
2 Tbsps dried Cranberry
4 Tbsps Apple juice
40 grams Pecan
200 grams mixed Lettuce (such as radicchio and frisee lettuce)
125 grams Blue cheese
4 Tbsps apple cider vinegar
2 Tbsps Canola oil
5 Tbsps Yogurt (0.1% fat)
2 Tbsps Quark
salt
freshly ground peppers
1 splash lemon juice

Preparation steps

1.

Preheat the oven broiler. Cut white bread into 12 thin slices and toast on both sides under the oven broiler, watching carefully, for about 5 minutes until crispy. Remove from the oven and leave to cool.

Remove pit from dates and cut into strips. Mix dates in a bowl with cranberries and sprinkle with apple juice. Toast nuts in a dry skillet until fragrant. Then remove from the pan and let cool.

Rinse lettuce, spin dry, tear into small pieces and arrange on four plates. Cut cheese into thin slices. Drain cranberries and dates through a sieve and collect juices. Mix juice in a bowl with apple cider vinegar, canola oil, yogurt and quark and season with some salt, pepper and lemon juice. Whisk mixture until frothy and season dressing again to taste.

Arrange croutons, dried fruit and cheese on the salad. Serve drizzled with the dressing.
