- For the salad
- 300 grams mixed Lettuce (as desired, trimmed, rinsed, shaken dry and plucked into bite-size pieces)
- ½ Cucumber (thinly sliced)
- 300 grams Cherry tomatoes (halved)
- 1 shallot (cut into thin rings)
- For the marinade
- 2 Tbsps White vinegar
- 5 Tbsps olive oil
- 1 tsp Mustard
- 1 pinch sugar
- 1 Tbsp finely chopped parsley
- 1 tsp salt
- freshly ground peppers

Preparation steps
1.
For the marinade, combine all relevant ingredients together, except for the oil. Gradually add the oil and mix with a whisk. Season well.
2.
For the salad, transfer all the prepared salad ingredients to a bowl, pour over the marinade and mix together.
3.
Tip: You can create a larger amount of marinade using the same ingredients ratio. Pour the extra into a bottle and refrigerate.
4.
Shake well before serving.
