For the salad
300 grams mixed Lettuce (as desired, trimmed, rinsed, shaken dry and plucked into bite-size pieces)
½ Cucumber (thinly sliced)
300 grams Cherry tomatoes (halved)
1 shallot (cut into thin rings)
For the marinade
2 Tbsps White vinegar
5 Tbsps olive oil
1 tsp Mustard
1 pinch sugar
1 Tbsp finely chopped parsley
1 tsp salt
freshly ground peppers

Preparation steps

1.

For the marinade, combine all relevant ingredients together, except for the oil. Gradually add the oil and mix with a whisk. Season well.

2.

For the salad, transfer all the prepared salad ingredients to a bowl, pour over the marinade and mix together.

Tip: You can create a larger amount of marinade using the same ingredients ratio. Pour the extra into a bottle and refrigerate.

4.

Shake well before serving.
