- 13 ozs Whole Wheat Spaghetti
- 2 Tbsps olive oil
- 1 clove garlic cloves (finely chopped)
- 1 onion (thinly sliced)
- 16 ozs boneless, skinless turkey breasts (cut into bite-sized pieces)
- 1 red Bell pepper (seeds removed, sliced)
- 1 green Bell pepper (seeds removed, sliced)
- 1 yellow Bell pepper (seeds removed, sliced)
- ¾ cup turkey stock (or chicken stock)
- salt (to taste)
- freshly ground Black pepper (to taste)
- 1 Tbsp chopped parsley
Preparation steps

Cook the spaghetti in a pan of salted boiling water, according to the packet directions, until ‘al dente’.

Heat half the oil in a pan and add the garlic and onion. Cook gently for 3-4 minutes until softened.

Heat the remaining oil in a separate pan and add the turkey in batches. Cook until cooked through. Remove from the pan.

Add the peppers to the onions in the pan and cook gently for 3-5 minutes until just tender.

Add the stock and continue cooking until reduced by half.

Add the turkey to the pepper and onion mixture and season to taste with salt and pepper.
7.
Remove from the heat and stir in the parsley.
8.
Toss the turkey mixture with the cooked, drained spaghetti.
9.
Divide between 4 warm serving bowls and sprinkle with walnuts and flat-leaf parsley.
