200 grams mixed Lettuce (Arugula, oak leaf, dandelion, Batavia)
150 grams Goat cheese (with herb crust)
2 Tbsps chopped Walnut
3 Tbsps olive oil
1 Tbsp Walnut oil
½ tsp sugar
salt
freshly ground peppers
1 tsp Mustard
1 Tbsp balsamic vinegar
1 Tbsp White vinegar

Preparation steps

1.

Rinse, trim and spin lettuce leaves dry. Tear into bite-sized pieces. 

2.

Cut goat cheese into about 1 cm (approximately 1/2 inch) thick slices.

3.

Whisk together both types of vinegar, mustard, sugar and both types oil until emulsified. Season with salt and pepper and stir in chopped walnuts.

4.

Divide salad among plates. Top with goat cheese slices and drizzle with salad dressing. Serve with wholegrain toast if desired.
