- 400 grams mixed Lettuce
- 1 Avocado
- ½ Fennel bulb
- 1 Red Bell pepper
- 1 Red onion
- 50 grams Pistachio (coarsely chopped)
- 100 grams Goat cheese
- salt
- 1 tsp honey
- 1 lemon (juice)
- 6 Tbsps sunflower oil

Preparation steps
1.
Rinse the lettuce leaves and spin dry.
2.
Rinse the fennel, core and thinly slice.
3.
Rinse the pepper, cut in half, remove seeds and cut into thin strips.
4.
Peel, halve and thinly slice the onion into strips.
5.
Halve the avocado lengthwise, remove pit and slice.
6.
Combine the lemon juice with the honey and oil. Toss the lettuce with the fennel, bell pepper, onion, avocado, and dressing. Sprinkled the chopped pistachios and crumbled goat cheese over top. Season with salt and divide between serving bowls.
