250 grams mixed Lettuce (such as lettuce, curly endive, radicchio)
2 untreated Oranges
100 grams peeled Walnut
200 grams Goat cheese
½ tsp Dijon mustard
½ tsp honey
salt
freshly ground peppers
4 Tbsps olive oil
mint (for garnish)

Preparation steps

1.

Rinse lettuce, trim, spin dry and tear into smaller pieces.

2.

Peel orange taking care to remove the white skin and remove fruit segments. Squeeze remaining orange and reserve juice.

Toast walnuts in a hot dry frying pan, remove and set aside.

4.

Cut goat cheese into thin slices. For the dressing, mix 2 tablespoons of orange juice in a bowl with mustard, honey and season with salt and pepper. Gradually mix oil in a thin stream.

5.

To serve, arrange the salad on a plate, cover with orange segments, cheese slices and nuts, garnish with mint leaves and serve with the dressing.
