Pour 300 ml water into a pan and add 2 tablespoons of olive oil. Bring to the boil.

Put the bulgur in a salad bowl. Add the boiling water and stir once. Leave for 15 minutes, covered loosely, and stirring from time to time until all the liquid is absorbed.

Carefully wash the lemons, brushing them under cold, running water. Cut 1 into thin slices and squeeze the juice of the other.
4.
Wash the tomatoes and remove their stalks. Plunge into boiling water for a few seconds. Pass under the cold, running water and then peel. Cut into thin segments.
5.
Add onions, parsley, lemon slices and tomato segments to salad bowl. Add the remaining olive oil and the lemon juice. Mix together well and season to taste.
6.
Leave in cool place prior to serving.
