2Oranges peeled
1scallions finely sliced
1 cupCashews roughly chopped
1 cupGolden raisins
1 cupCurrants
juiced and zested lemons (from one lemon)
2 tablespoonsolive oil

Directions

1 Place the couscous in a pan with 2 cups of warm water. Let it sit for 15 minutes then fluff up with a fork.
2 Cut away the orange segments, leaving the membranes behind and reserving the juice. Set the segments aside.
3 Mix the remaining ingredients into the couscous, adding the orange segments and juice, and season with salt and pepper.
