1 Lime (juiced)
2 Tbsps olive oil

200 grams Prosciutto (or Serrano ham)

Preparation steps

1.

Halve and seed the melon crosswise. Scoop some balls from the pulp with a melon baller.

2.

Peel mango, cut the flesh from the pit and chop into pieces. Puree with the honey, lime juice and oil. Season with salt and cayenne pepper.

3.

Toss the melon balls with the puree and arrange in scooped melon halves. Top with proscuitto and garnish with basil.

4.

Serve in an iced bowl, if desired.
