Pizza Rollups with Prosciutto, Fresh Mozzarella, and Basil

- 500 grams Pastry flour
- 250 milliliters lukewarm water
- 1 pinch sugar
- ½ cube Yeast (about 20 g)(approximately 3/4 ounce)
- 1 tsp salt
- 3 Tbsps olive oil
- For the filling
- 1 bunch Basil (with large leaves)
- 250 grams Mozzarella (diced)
- 125 grams Prosciutto (thinly sliced)
- 40 grams Parmesan (grated)
- 50 grams Walnut (chopped)

- olive oil (to brush)
- Pastry flour (for working)
- 3 thyme
Preparation steps
Mix the yeast in a little warm water to dissolve the sugar and stir until smooth. Mix with the remaining dough ingredients and knead into a dough. Cover and let rise for about 1 hour. Rest in a warm place, such as a 50°C (approximately 125°F) oven.
On a floured surface, roll the dough out into a 30 x 35 cm (12 x 14 inch) rectangle. Top with the basil, fresh mozzarella, prosciutto, and walnuts.
Press down the sides of the dough. Starting on one of the narrow ends, carefully roll up the dough. Place on a greased baking tray, seam side down. Brush with olive oil, and press the thyme sprigs into the dough.
Preheat the oven to 180°C (approximately 350°F). Bake for 35 minutes, until golden brown. Remove from the oven, drizzle with olive oil, and let cool.
Cut into slices, and serve.
