1 Cantaloupe (halved, peeled and deseeded)
lemon juice
1 cup Salmon (finely chopped)
1 shallot (finely chopped)
1 Tbsp fresh, edible Bamboo shoots (chopped)
1 Tbsp grapeseed oil
1 scallion (green section finely sliced into rings on the diagonal)
cup Sour cream (stirred until smooth)

Preparation steps

Cut the melon into slices as close as possible to 2.5 cm thick and cut these into 16 cubes measuring approximately 2.5 cm on each side. Use a melon baller to scoop 16 melon balls out of the remaining flesh. Arrange the cubes and balls in dishes and drizzle with a little lemon juice.

Mix together the salmon, shallot, shoots and grapeseed oil. Season with sea salt, lemon juice and lemon pepper. Arrange a teaspoonful on top of each cube of melon. Top with a slice of spring onion and drizzle the sour cream over the melon balls. Serve immediately.
