- 28 ozs Zucchini (thinly sliced)
- salt
- 6 Tbsps olive oil
- 3 cloves garlic cloves (finely chopped)
- 1 chili pepper (finely chopped)
- ⅛ cup white wine vinegar
- freshly ground peppers
- Basil
Preparation steps
1.
Spread the courgette slices on a plate. Sprinkle lightly with salt and leave to rest for 20 minutes, then pat dry.

Heat 2 tablespoons oil in a frying pan and put in enough courgette slices to cover the base of the pan. Fry for 1 minute on each side, then drain and set aside. Repeat the process with the remaining courgette slices, adding more oil for each batch.
3.
Fry the garlic in the remaining oil until translucent. Add the chilli and briefly fry both together.
4.
Add the vinegar, 1/2 teaspoon salt and a pinch of pepper, stir and pour over the courgettes. Cover and leave to marinate for 1 hour.
5.
Thread on to wooden sticks with basil leaves.
