Heat the oven to 400°F.
Season the chicken pieces with salt and pepper. Wash the herbs, shake dry and chop the leaves. Wash the lemons and cut 3 lemons into thin wedges. Squeeze the juice out of the last lemon.
Place the chicken pieces, herbs, tomatoes, olives and lemon wedges into a roasting tin and mix. Pour white wine over the top and drizzle honey, lemon juice and olive oil over the top. Bake in the oven for 40 minutes.
