Ingredients

- For the meatballs
- 2 slices Toast
- 1 onion
- 250 grams mixed Ground meat
- 1 small egg
- 4 tsps sun-dried tomato pesto (Finished product)
- 1 tsp dried oregano
- salt
- freshly ground pepper
- 3 Tbsps olive oil
- 1 Beefsteak tomato
- 150 grams Mozzarella
- fresh, as desired Fresh herbs (for garnish)

Preparation steps

Soak toast in lukewarm water for 5 minutes. Peel onion and dice. Add ground beef to a bowl and add egg, pesto, oregano, onions and expressed toast. Season with salt and pepper. Knead until smooth. Shape into meatballs. Heat 2 tablespoons of olive oil and cook meatballs for 10 minutes.

Rinse tomatoes and cut into thick slices. Heat remaining olive oil in a pan and cook tomato on both sides over high heat. Remove from heat. Add meatballs. Cut mozzarella and spread over meatballs. Melt under a preheated broiler, watching carefully. Garnish to taste with fresh herbs and serve.
