20 grams Pine nuts
3 Tbsps olive oil
400 milliliters Vegetable broth
200 grams Couscous

600 grams Ground meat (lamb or beef)
1 egg
2 Tbsps finely chopped parsley
½ tsp Cumin
4 Tbsps breadcrumbs

Preparation steps

For the couscous: Rinse the bell peppers, cut in half, remove seeds and white ribs, and cut into small cubes. Heat 1 tablespoon of the oil in a skillet. Add the bell peppers and pine nuts and cook until the pine nuts are golden and fragrant. Stir in the broth and couscous. Season with salt and pepper to taste. Cover and remove from heat. Allow to sit until the couscous is tender, about 10 minutes.

For the meatballs: Peel and finely chop the garlic. In a bowl, combine the ground meat with the garlic, egg, parsley and cumin. Add enough breadcrumbs to make the meat mixture easy to shape. Season with salt and pepper to taste. Divide the meat mixture into 8 patties.

Heat the remaining oil in a skillet. Add the patties and cook, while turning occasionally, until golden on all sides, about 6-8 minutes.

Drain the patties on paper towels.

For serving: Serve the patties on plates with the couscous. Garnish with the remaining parsley.
