Meat Patties with Vegetables
Ingredients

- 250 grams Beets
- 500 grams green Beans
- salt
- 1 onion
- 1 garlic clove
- 1 Tbsp freshly chopped Tarragon
- 2 Tbsps butter
- ground Caraway
- For the meat patties
- 1 day-old White roll
- 1 onion
- 1 Tbsp butter
- 2 eggs
- 1 Tbsp freshly chopped parsley
- 600 grams mixed Ground meat
- breadcrumbs (as needed)
- 1 tsp hot Mustard
- salt
- freshly ground peppers
- clarified butter (for frying)
- For garnish
- Lemon wedge
- Caper
- Anchovy fillet
Preparation steps
For the vegetables, rinse beets and steam for about 35 minutes in skins. Rinse beans, trim and cook until al dente in boiling salted water for about 5 minutes. Rinse in cold water, drain and cut into pieces. Rinse beets in cold water, peel and cut into small cubes.
For the meat patties, soak the roll in a little warm water. Peel the onion, chop finely and cook in hot butter until translucent. Mix onion, squeezed roll, eggs and parsley with the meat. As needed, add breadcrumbs so that the dough is easily malleable. Season well with mustard, salt and pepper. Shape into small patties and fry in hot clarified butter on each side until golden brown, 3-4 minutes.
For the vegetables, sauté onion with the garlic in butter briefly and add the beans with tarragon. Season with salt. In the remaining butter sauté beet and season with salt and caraway seeds.
Arrange the meat patties on the beans. Distribute the beets around the beans and serve garnished with lemon wedges, anchovies and capers.
