1 tsp freshly grated ginger
80 milliliters apple cider vinegar
1 Tbsp finely chopped cilantro

Preparation steps

1.

Peel mango, halve and pit, cut pulp into small cubes. Blanch tomatoes, peel, quarter, core and cut into small cubes. Peel shallots and chop finely.

2.

Caramelize sugar in a pan. Add shallots, garlic and ginger, mix well. Deglaze pan with vinegar. Add mango and tomato cubes. Simmer, covered, on low heat for about 10 minutes. 

3.

If necessary, add a little water. In the end, add cilantro leaves and season with salt and cayenne pepper. Cool. Serve as needed.
