200 grams starchy potatoes
1 shallot
1 garlic clove
1 Tbsp vegetable oil
600 milliliters Vegetable broth
300 grams Lettuce
100 milliliters Whipped cream
2 Tbsps Crème fraiche
salt
1 splash lemon juice
freshly ground peppers

Preparation steps

Peel the potatoes and dice them. Peel and finely chop the shallot and garlic. Sauté shallot and garlic together in hot oil, then add the potatoes and pour in the broth. Simmer gently, about 20 minutes.

Rinse the lettuce, spin dry and cut into strips. Add lettuce to soup, bring to a boil, then puree. Add the whipping cream and let simmer a little. Stir in the creme fraiche and season with salt, lemon juice and pepper.

3.

Serve with goat cheese toast.
