- 1 Lettuce (Romaine lettuce)
- 2 shallots
- 500 milliliters vegetable stock
- 250 milliliters Whipped cream
- 2 Tbsps olive oil
- salt
- freshly ground peppers
- ½ tsp Chili powder
- freshly grated Nutmeg

Preparation steps

Rinse lettuce and remove outer leaves. Cut lettuce into strips. Peel shallots and chop finely. Heat oil in a saucepan and saute shallots gently. Add lettuce and saute on low heat for a few minutes. Add vegetable stock and bring to a boil, reduce heat and simmer, covered, for about 1-2 minutes on low heat.

Remove from heat and puree with an immersion blender finely or coarsely, as desired. If soup is too thick, add a little water (50-100 ml) (approximately 1/5- 2/5 cup). Add cream and reheat soup. Season heavily with salt, pepper, chile powder and nutmeg. Pour into bowls and serve hot.
