- 2 Lettuce
- 1 onion
- 2 Tbsps butter
- 1 Tbsp flour
- 3 cups vegetable stock
- ⅞ cup cream
- salt
- freshly ground Black pepper
- Nutmeg
- lemon juice
- Chives (to garnish)

Preparation steps
1.
Wash and sort the lettuce, shake dry and cut into thin strips. Peel and finely dice the onion.
2.
Heat the butter in a pan and sweat the onion until translucent. Sprinkle with flour and cook for a couple of minutes without browning.
3.
Then stir in the stock and simmer for 10 - 15 minutes, stirring occasionally. Reserve 4 tbsp lettuce strips and add the rest to the soup.
4.
Add the cream and season well with salt, pepper, nutmeg and lemon juice. Simmer for a further 5 minutes.
5.
Finally puree the soup and adjust the seasoning. Serve the soup on plates or in bowls garnished with the reserved lettuce strips and chives.
