- 2 ½ cups peas
- 1 onion
- 1 Tbsp Oil
- 2 Tbsps butter
- ⅓ cup flour
- salt

- 2 cups Vegetable broth
- 1 ⅔ cups milk
- Nutmeg
- ¼ cup cream (at least 30% fat) whipped
- 2 Tbsps Sesame seeds (toasted)
- parsley

Preparation steps

Wash and shred the lettuce leaves. Thaw the peas. Peel and finely chop the onion. Heat the oil in a pan and saute the prepared vegetables. Then add the broth and simmer for 10-15 minutes.

In another pan melt the butter, stir in the flour and cook for a couple of minutes without browning. Gradually stir in the milk and simmer over a low heat for about 5 minutes.

Finely puree the pea and lettuce mixture and push through a sieve. Stir into the white sauce and return to a boil. Season with salt and pepper and add nutmeg to taste.

Ladle the soup into bowls and add a little whipped cream to each. Sprinkle with sesame seeds, garnish with parsley and serve.
