6 sheets silver gelatin
500 milliliters Whipped cream
40 grams sugar
2 sprigs Lavender
For the fruit
150 grams fresh Strawberries
4 Apricot
1 tsp lemon juice
1 tsp honey
1 Tbsp Lavender

Preparation steps

Soften the gelatin in cold water. Bring the cream and sugar to a boil with the lavender. Reduce heat and simmer for about 10 minutes. Remove from the heat and discard the lavender. Squeeze any excess water from the gelatin and melt in the cream. Distribute between 4 ramekins (each 150 ml) (approximately 5 ounces), let cool then chill, covered, for at least 4 hours in the refrigerator.

To serve: Rinse the fruit and pat dry. Cut the strawberries into quarters. Cut the apricots in half, pit and cut into wedges. Gently toss the fruit with the lemon juice and honey. Run a sharp knife around the edges of the ramekins, dip briefly in hot water and invert the panna cotta onto serving plates. Garnish with fruit and a few lavender flowers.
